I love French Toast! The only problem is that it takes time to make and we need a quick meal most mornings. That’s where this Sourdough French Toast Skillet Comes in. It is all cooked in one pan in the oven. It is the perfect solution for our large family.

Sourdough
This Sourdough French Toast is technically not toast, instead of using bread, I use some of my would-be discarded sourdough starter. It is an easy way to consume grains in a healthy way and come, on, who doesn’t love carbs?

Ingredients
- 2 cups sourdough starter
- 6 eggs fresh eggs are best if possible
- 1/4 cup maple syrup
- 1 tbsp vanilla extract
- 1 to 2 tbsps of ground cinnamon or to taste
- 1 tsp salt
- 1tsp baking soda
- 2 tsp baking powder
- 3 tbsp of butter

- Glass bowl
- Measuring set
- Whisk

Sourdough French Toast Skillet
The beauty of this breakfast is that is cooked all in one pan and the same time, unlike traditional French toast. This cuts down on cook prep time, cook time, and clean-up! Here is how to make it.
First, preheat the oven to 350F with your cast iron skillet inside.
Start with about two cups of sourdough starter, I usually feed mine sometime before bed so it is always ready in the morning but I don’t see how discard wouldn’t work for this.

To the starter add the six eggs, maple syrup, vanilla, salt, and cinnamon. Mix well.

Once everything is incorporated sprinkle the baking soda and the baking powder in. I do mean sprinkle, the last thing you want is to bite into a clump of either or. I actually recommend you sift it in if you have a small sifter. Give it another good mix.
Once the oven is preheated take your cast iron skillet and melt the butter. Once butter is melted pour the batter into the skillet.

Bake for about 15 minutes.
I always use those 15 minutes to quickly clean up my kitchen.

Voila! Serve with maple syrup or if you are really fancy some fruit and whipped cream.

Notes
- This French Toast Skillet is made with sourdough. You can use either starter discard or active starter.
- I use a cast iron skillet because cleaning it up requires just wiping it with a paper towel but you can use a baking dish if you don't have one.
- Serve this with maple syrup, fruit, whipped cream, or any other toppings you enjoy on your regular French toast.
- Depending on the size of your family you can easily double this recipe by growing your sourdough starter the night before.
