This is a super easy sourdough flatbread pizza that does not compromise flavor! I have to warn you though learn how to make this no-knead dough at your own risk. Because once you try it you will want to make it again and again.

What Makes this flatbread pizza special?
This flatbread pizza is made special because of how easy it is to get consistent results. I love how beginner-friendly this dough is to make. The best part is you do not need any equipment! While I love my Kitchen-Aid Mixer, I know not everyone has something like it available and many recipes make it a requirement. This one does not.

No kneading, No equipment
As I said before this dough is made without the need for kneading. Therefore you do not need a mixer or strong arms. I find it super convenient because I can start it the night before if I’m making it for lunch. Alternatively in the morning if I am making it for dinner. I mix it and let it sit and sort of forget about it until I need to bake it. Stretching the dough is better but I have done it both ways and it turns out delicious regardless.

Ingredients

For Dough
- 1 cup bubbly sourdough starter
- 2 cups all-purpose flour
- 2 cups bread flour
- 2 tsp real salt
- 1 tsp dried Italian Herbs
- 1/2 cup parmesan cheese
- 2 tbsp olive oil
- 1- 1 1/4 cup water
- Cornmeal for sprinkling (optional)

How to Make Sourdough Flatbread Pizza
First I like to start by making the dough. In a large mixing bowl add the sourdough starter, flour, salt, spices, parmesan cheese, and olive oil.

Next, add one cup of water first and then more as needed to make a sticky but not too loose dough.

At first, this dough will be clumpy but as you let it rest it will become smoother.

This is what it looks like about two hours later. At this point, you can choose to stretch the dough like I do here to make Artisan Sourdough Boule. Below is the dough after stretching.

Cover and let rise overnight or for at least 4 hours until doubled in size. If your house is cold this process will take longer.

Once the dough has doubled it is time to shape it.
Shape the flatbread
To shape the flatbread start by turning the dough into a well-floured surface. The dough will be a bit loose and sticky. You can use a dough scraper to get it all out of the bowl, if you do not have one you can get one here. You can also try to use a spatula.

Next, you can use a dough cutter to divide the dough into two equal pieces.

Set one of the pieces aside. Add more flour to the surface you are working on and to a French rolling pin. Using the rolling pin shape the dough into a rectangle. The dough will want to “shrink” back down so you can stretch it a bit with your hands.

Add toppings
Now, it is time to add toppings. You can get creative and make Greek, Mediterranean, Italian, Vegetarian, or any combination you like. you can also just stick to cheese and pepperoni. What I always do is coat it with some olive oil before adding the toppings.

One of my kids’s favorite combinations is marinara sauce, spicy salami, and fresh mozzarella.

My personal favorite is a layer of cherry tomatoes (or sliced garden tomatoes in the summer), sliced sweet peppers, black olives, prosciutto, and spring mixed topped off with feta cheese.
Baking Sourdough Flatbread Pizza
Preheat the oven to 400F. Bake the flatbread pizza on a cookie sheet lined with parchment paper and sprinkled with cornmeal if you have it. Bake for 20 minutes.

Allow to cool for a few minutes before serving.
Sourdough Flatbread Pizza
This easy-to-make dough makes the best flatbread pizza. Add your favorite toppings to complete this dish.
Ingredients
- 1 cup bubbly sourdough starter
- 2 cups all-purpose flour
- 2 cups bread flour

- 1- 1 1/4 cup water

Instructions
- Start by mixing the sourdough starter, all-purpose flour, bread flour, salt, Italian herbs, and parmesan cheese.
- Next, add the olive oil and water. Only add enough water until the dough starts to form. The dough should be slightly sticky but not too loose. If you accidentally add too much water add all-purpose flour one tablespoon at a time.
- Cover the dough and allow to ferment for 4-8 hours or until doubled in size.
- Alternatively, you can stretch the dough every 30 minutes to shorten the rise time.
- To stretch the dough just work from the outside in going around in a circle about 6 times. The dough should get smoother and stretchier with every stretch.
- After the dough has doubled in size it is ready to be shaped.
- Prepare two cookie sheets before shaping the dough by lining them with parchment paper and sprinkling it with some cornmeal.
- To shape the dough first flour a flat surface like the counter and turn the dough out. You can use a dough scraper to make sure you get all of it.
- Next, using a dough cutter divide the dough into 2 pieces.
- With a rolling pin roll one of the pieces out into a 8 by 13" rectangle. the dough will naturally want to shrink back you can use your hands to gently stretch it out.
- Transfer the dough to a prepared cookie sheet. Brush some olive oil on the dough before adding the toppings of your choice.
- Add the toppings of your choice. You can make it as simple or as fancy as you would like. I highly recommend spicy salami, cherry tomatoes, fresh mozzarella, and black olives.
- Preheat the oven to 400F once the oven is preheated bake the pizza for 20 minutes.
- Allow the pizza to cool for about 5 minutes before serving.
Notes
- You can choose to leave the parmesan cheese and Italian herbs done if you prefer.
- You can mix this dough ahead of time and keep it in the fridge. Pull it out at least 2 hours before baking.
- I have tried making this pizza with both sauce and without sauce and it works both ways.
