What are cornbread muffins?
Cornbread muffins are a baked good popular in the Southern United States and other parts of the American continent. Growing up my Mexican grandma baked cornbread in her cast iron skillet made from fresh cornmeal. Cornbread is made with a mixture of wheat flour, cornmeal, and milk or water. While there are many recipes and it has changed over the years it dates back to many Native American cultures throughout the American continent.

What is Kefir?
Kefir is a type of fermented drink usually made from milk and kefir grains. It contains a collection of bacteria, yeasts, and other microorganisms that are associated with better gut health. Once added to the milk the kefir grains feed on the sugars making it low in lactose and full of probiotics. Thanks to all the benefits I love using kefir in my kitchen to help aid our family’s overall health.

Ingredients for Healthy Kefir Cornbread Muffins
- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 tsp of baking powder
- 2 tbsps sugar
- 1 tsp real salt
- 1/4 cup honey
- 1 large egg or two small ones
- 1/2 cup melted butter
- 1 cup of kefir

How to make Kefir Cornbread Muffins
I love to make these cornbread muffins as a side to my favorite Bone Broth Chilli or this easy AirFryer Roasted Chicken. What I love the most besides the taste is just how fast and easy they come together.

To begin, I start by preheating the oven to 400F. While the oven is preheating I continue by adding the dry ingredients to a large bowl.

Once the flour, cornmeal, sugar, and baking powder are mixed I add the melted butter, egg, honey, and kefir making a thick batter.

Next, I grease a 12-count muffin tin with softened butter. Using a 1/3 cup measuring cup I evenly add the batter to the muffin tin.

After, I add the unbaked muffins to the preheated oven and bake at 400F for 5 minutes. This ensures a tall muffin. Once the 5 minutes are up I lower the temperature to 350F and bake for another 16-18 minutes. I know they are done when a toothpick comes out clean.

When they are done I allow them to cool on a cooling rack for 5 to 10 minutes before serving.
What if I do not have kefir?
While I prefer to use kefir for the added health benefits. You can still make these cornbread muffins just substitute the kefir for buttermilk or regular milk. The muffins will still be a much healthier alternative to anything that comes out of a box.

Healthy Kefir Cornbread Muffins
Super easy, delicious, and healthy? Yes, that is right! These cornbread muffins are better than any box mix in every way. Try these next time you want something sweet on the side. You will never go back to storebought.
Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 tsp of baking powder
- 2 tbsps sugar
- 1 tsp of real salt
- 1/4 cup honey
- 1 large egg or two small ones
- 1/2 cup melted butter
- 1 cup of kefir
Instructions
- Preheat oven to 400F
- Start by mixing the flour, cornmeal, baking powder, salt, and sugar in a large mixing bowl.
- Melt the butter and set aside to cool while you add the rest of the wet ingredients to the dry.
- Add the wet ingredients one the time and gently fold in until it forms a smooth batter.
- Set aside, with softened butter grease a 12 count muffin tin.
- Using a 1/3 cup measuring cup spoon the batter in to the muffin tin. There should be just enough for the 12.
- Bake at 400F for 5 minutes. After the 5 minutes lower the oven temperature to 350F an bake for an additional 16-18 minutes.
- Check to see if they are done by using a toothpick. if it comes out clean they are done.
- Cool for 5 minutes before serving.
Notes
- I love using kefir because of the probiaotic benefits it offers. However if you do not have kefir you can use a one to one substitute of buttermilk or regular milk.
- You can add toppings like cheese and minced jalapenos.
- You can use corse or fine yellow cornmeal.
- Baking the muffins at a higher temperature like 400F first it will insure nice and tall muffins. Just don't forget to lower the temperature or the outside will burn before the inside cooks.
- I specially love these as a side for chlli but you can have these are a sweet treat with coffe or as a side for breakfast.
